Happy National Homemade Soup Day! There’s nothing better than curling up with a warm bowl of soup on a cold winter day and this “holiday” couldn’t have come at a better time, especially with the blizzards hitting our CRAVE locations in Bethesda, Omaha, and Minnesota in the last couple weeks!

This delectable soup can be served as a starter or a main course. Made without cream, it’s a lighter alternative, which we’re all about!
“There is no cream added, the silky texture is simply from pureeing it… Sometimes I add some diced carrots, or even celery – there are no rules here.”
Who says pumpkin soups are exclusive to fall? We’re loving the curry and coconut flavor of this soup and think it’s a perfect way to fight the winter sniffles!
“For poultry lovers, add in 2-3 chicken breasts chopped into bite-size chunks…for vegetarians, add chunks of tofu.”
What we loved about this soup is how low maintenance it is. Prep the ingredients, throw it in a slow cooker for 6 hours, shred the chicken and BAM!
When we stumbled upon this recipe for Roasted Carrot Ginger soup, we were intrigued. Carrots and GINGER?
“I had a hunch that this soup wouldn’t need anything other than just a handful of the simplest ingredients: onions, vegetable stock, ginger, cream, and, of course, carrots. Happily, my hunch paid off in the form of a richly hued, zingy little soup that would hold its own among those with twice the ingredients, or more.”
