You’re probably wondering why we’re writing about non-waffles on International Waffle Day, right? No, we don’t dislike waffles, but the fact of the matter is, we’re sort of already in a relationship with French Toast and we didn’t want to have to change our Brunch Relationship Status to “It’s Complicated,” you can’t blame us, right? 😉

Who’s not a fan of delicious food that’s quick and easy?! Done in 3-4 minutes, this dish definitely adds a little something extra to your plate!

“I kind of like how the eggplant ended up in a waffle shape, too.  For one thing, it made nice little pockets for holding the red sauce!  And I totally convinced my kids to eat these by calling them “crunchy Parmesan waffles.”
